I never thought this blog would be to update on the ever developing Covid-19 situation. I write this with huge sympathy for those suffering with the virus, and wish them a speedy recovery soon. Since we have been operating out of our site in Sussex, we have battled through so many different situations to ensure our customers are supplied with oysters, on every phone call, on every day, at every time of the day or night. I cannot add up how many oysters we have delivered over the years, but it must be around 20 million, with few, or very few mistakes, errors, or missed deliveries. At this time however, with restaurants, hotels, clubs and other establishments closed, along with the uncertainty of the courier system, we have decided to place our oysters back in the sea, to freshen up, so that we will be back with plumper, stronger oysters when we are able to re-open. It is indeed a very tricky time for us, and we would like to thank everyone for all the kind words of support, along with the recent orders for direct deliveries. All of us at Rossmore have never heard our shed empty. It always has the excitement of flowing water, happy oysters, chilled waterfalls of water, grading machines sorting, compressed air blowing, and the kettle boiling. It has been like this for the past 175,000 hours, now silence.
We will be busy however this summer, with our well established breeding programme for native oysters in our ponds in Cork. And also with our purchase of over 2 million young rock oysters at 2mm in size, these will require three years of love, before we are able to offer them to the market.
