West Mersea Rock Oysters

West Mersea Rock oysters are grown in the creeks around West Mersea, Essex. These oysters are special, as they have naturally bred in the Essex waters, and are nurtured from an early age. When the oysters are first harvested they are on the smaller side, and these are then laid up the warmer fertile creeks, where they grow into a better shape, and the flesh becomes plumper with the rich algae in the waters. They have a strong shell, and last well out of water.
